First WIAW of Fall

So I’ve been away from WIAW for waaay too long, but I am back with a vengeance. I’ve got some awesome things so share that fit this month’s theme to a T! Without further ado, lets get to the eats, people!

First up are two of my favorite fall breakfasts – pumpkin pancakes and pumpkin french toast!

Dinners have been yummy too, and the perfect things to warm you up on a chilly afternoon.

Tortellini Soup with a side of Corn Bread.

Spaghetti Squash with Turkey Meatballs and Mushroom Marinara.

Desserts have been pretty amazing too!

We baked pink Madeleine’s for the Breast Cancer Bake Sale at my mom’s work. We also dipped some in white chocolate and sprinkles with pink heart sprinkles. Unfortunately, I didn’t get a picture of the final product…they were so cute, and a hit at the sale!

A 16 Handles opened up just a few blocks from my subway stop and I had to indulge. Fist Pumpkin, Salted Caramel and Graham Cracker topped with some berries, mini peanut butter cups and sprinkles.

I’ve also been loving Oktoberfest and Pumpkin beers, but those deserve a post of their own so I will leave you with just this teaser!

What’s the best thing you’ve eaten lately?

Halloween Painted Pumpkins

Since our pumpkin picking trip was a huge success, it’s only natural that I turn some of those pumpkins into cute Halloween crafts.

BOOM! How cute and silly are these guys?

When I first saw this idea in Rachael Ray’s Everyday magazine, I figured that it would be time-consuming and messy, but that was soo far from the case.

We made sure to put down a tarp to keep our sidewalk from getting painted and got to work. We used just the cheapo, Home Depot store brand spray paint, and it worked great.

I enlisted the help of Tommy to do the painting. We used quick, short sprays to cover the pumpkins, making sure not to overspray and leave drip marks. Even though the paint cans said that it should be dry withing 15 minutes, we waited overnight. The next day I flipped the pumpkins and painted their butts.

I left them to dry for about an hour to dry before flipping them back over, and painting on the eyes. This is probably the only part that I regret joining cheapo on. I opted to buy acrylic craft paint and a plain old paintbrush, but it would’ve worked better if I spent the extra three bucks and bought a paint pen. Live and learn.

Anyway, I drew on the outlines of the eyes with a pen and filled it in with the paint. I drew on the irises and fixed the outlines with a black sharpie and viola!

Do you decorate for Halloween?

Pumpkin Picking 2012

On Saturday, we got to cross another thing off of our fall bucket list, pumpkin picking! We headed out to Long Island to the same place we went last year, Stakey’s Pumpkin Farm. The weather wasn’t too hot and it was drizzling a bit on the way there, but we managed to get out in the fields without a drop of rain.

Stakey’s has a flat rate for all you can carry, so we loaded up all eight pumpkin and had Tommy carry them. He almost lost a few along the way, but luckily they all made it to the register in one piece. The kiddies also got to jump in the bouncy castle before the rain returned. I was hoping on getting into the corn maze, but we had to get going and out of the rain. All in all, we had a great time, and got a great deal on our pumpkins!

I love these little traditions that we are starting with Munchkin and I cannot wait to decorate our pumpkins and the rest of the house.

What are your fall traditions?

Official Start to Fall

Even though fall officially started this Saturday with the Autumnal Equinox, fall officially began in my kitchen this morning when I cracked open the first of many cans of pumpkin that will be consumed this year.

I threw together one of my favorite waffle combos from last fall – Pumpkin Cream Waffles. All you need is a tablespoon of pumpkin, tablespoon of Chobani, some pumpkin spice and some maple syrup and viola!

The next thing that I am dying to make are a healthier version of Starbucks’ pumpkin cream cheese muffins. Those babies were my BFFs when I was pregnant with Munchkin, but since then I’ve tried to stay away since they aren’t exactly the healthiest thing on the Starbucks menu.  Every time I step foot into Starbucks, I swear that I hear them calling my name from the pastry case!

What pumpkin goodies do you want to try this season?

Fall Bucket List

Last fall was pretty amazing. We went pumpkin picking, baked lots of seasonal goodies and devoured every pumpkin flavored item I could get my paws on, but I think this one can be even better!

Since today is the first day of fall, I thought it would be fun to share my Fall Bucket List!

What do you want to do this fall?

A Jam Packed Thanksgiving Weekend

Is it just me, or do long weekends fly by faster than regular ones? I can’t believe Thanksgiving has come and gone, but I am excited because I can finally go Christmas crazy without looking like a total nut.

On Wednesday, we hit up the supermarket early to avoid the crowds and so I could get started on my baking. When we got home, Munchkin napped and I managed to get both my Pumpkin Cheesecake and Carrot Cake done while he slept. I also ripped up the bread for my stuffing. I have to share the recipe with you guys, because it is so good and was the only thing that did not leave leftovers. After Tommy got home, we went to Toys R Us to buy birthday gifts for Arianna, Tommy’s goddaughter, who turned one on Turkey Day!

We woke up on Thursday ready to cook.  I brined my turkey on Wednesday morning in a mixture of water and apple cider with spices, fresh garlic and bay leaves.

Before the bird went into the oven, I spread a mixture of butter and spices under the skin to make sure it didn’t dry out during baking. I also basted the crap out of the bird and I have to say, that I think it paid off becuase the meat was juicy and delicious. We also had mashed potatoes with mushroom gravy, green beans with pumpkin seeds, pearl onions with peas and carrots, sweet potatoes, butternut squash with spinach, craisins and mandarins, mushroom stuffing, homemade cranberry sauce with ginger and a pinapple glazed ham.  Basically all the foods that will lead you to laying down on the couch with a food coma shortly after. For dessert we had my Pumpkin Cheesecake and Carrot Cake along with some cakes that my cousin brought from the bakery she works at.

My favorite thing on Thanksgiving it the stuffing, so I’m going to share my recipe that I’ve used for the past few years.

Mushroom Stuffing (adapted from Rachael Ray)

  • One and a half 1-pound loaves white bread, cut into cubes
  • 1  bunch of celery with leaves, coarsely chopped
  • 3 sticks (12 ounces) unsalted butter
  • 2 onions, chopped
  • 2 8 oz. packages white mushrooms, sliced.
  • 3 tablespoons poultry seasoning
  • salt and pepper to taste
  • 2 large eggs, beaten with 2 tablespoons water.
  • grated Parmesan cheese.

Preheat the oven to 250°. Scatter the bread cubes on a baking sheet and bake, tossing occasionally, until dried but not browned, about 40 minutes. Let cool. Increase the oven temperature to 350°.  In a large, deep skillet, melt the butter over medium-high heat. Add the onions and cook until translucent, about 10 minutes. Mix in the celery and mushrooms and cook over high heat, stirring frequently, for 10 minutes. Stir in the salt, pepper and poultry seasoning until thoroughly combined. In a large bowl, toss the bread cubes with the beaten egg mixture. Add the vegetable mixture and toss until well combined. Spoon the stuffing into 2 buttered 3-quart casserole dishes, top with Parmesan cheese and bake, uncovered, for 40 minutes.

****************

Friday was Black Friday, so of course we had to do some shopping. We didn’t stay up all night or get up at the crack of dawn, but we did manage to get some awesome deals anyway. We started off at Kohl’s and hit up Toys R Us, Sears and Burlington before calling it a day. I got a Rachael Ray Casserround, some towels, gifts for the kids from next door and Alex’s babysitter, and a pair of new flats for myself. I also left with $60 in Kohl’s cash, so I’m planning on going back to get a new coffee maker.

After shopping, we got home and rested a bit because we had a big party to go to on Friday night, Arianna’s first birthday! They had the party at an Italian Restaurant and the food was amazing. Munchkin also discovered a love for calamari. I put some on my plate and went to get him a mozzarella stick, only to find him chowing down on the calamari on my plate. His food choices never cease to amaze me. He couldn’t wait for the cake to come out and almost died when he had to wait for them to take pictures and cut the cake.

Saturday and Sunday were relaxing days. Since the weather was gorgeous, we went to the Long Island City peirs on Saturday night so Munchkin could run around and play at the playground. We also found a great Mexican place, which I think may just become our go to Mexican restaurant.  Vamos al Tequila is a traditional, family run, little hole in the wall place in Greenpoint.

The portions are huge too, so we had enough to take home and have for lunch on Sunday.

We finished off our Sunday watching Pretty Woman and eating edamame and Coldstone Ice Cream, but not together. It was a great break from real life, but now I have to get into lockdown mode and start studying. Finals are less than two weeks away and I need to kick some butt.

Have a great Monday!

How was your Thanksgiving? Did you get any good Black Friday/Cyber Monday deals?

I Could Get Used to This

I started the day off yesterday with a run. The weather was perfect and the leaves finally started changing colors on the trees.
Instead of running around the park like I used to, I’ve started running through my neighborhood.  I find myself getting lost in the place where I’ve lived my whole life and it’s kind of fun deciding which way to go to get home. The change in scenery is great and makes me want to run more often.

I came home from school to a wonderful dinner made by my wonderful boyfriend.

Tommy cooked up delicious steak, which was one of the best steaks I’ve ever had in my life.  He served it with long grain wild rice and edamame on the side. We both agreed that it’s better the get a pricier steak and really enjoy it once in a while, than to get any old steak from the supermarket.

I told him I could get used to coming home to dinner every night, especially if it’s this yummy.

For dessert, we had some Dark Chocolate Pretzel Crisps.  These bad boys taste just like a Starbucks Peppermint Mocha, so if you’re a fan of the drink, you will love these. I know I do, maybe a little too much. They taste just like Christmas to me.  I think I might’ve jumped on the crazy early Christmas wagon. I didn’t mean too, but I love Christmas.

Continuing with my Thankful November list, F is for friends and family.

I have a great group of people who I get to call my friends and family, and I know I can always count on them.  I sure as heck wouldn’t be who am I today without them, and for that, I am forever grateful.

Have a great Thursday!

Frankenbaby does Halloween

Happy November! Can you believe it’s already November? Halloween was a huge success. Munchkin loved his costume and trick or treating.

We started off the morning with some special Halloween pancakes, which were just my pumpkin pancakes with a candy corn smiley face on them. Big hit with Munchkin, but pancakes always are.

During naptime, I got to cookie making. I had my eye on these cookies for weeks, and I’m happy I found the time to make them. They’re basically sugar cookies with a piece of candy corn pressed into them when they come out of the oven. Very simple, very yummy and cute and festive.

Candy Corn Sugar Cookies

  • 4 tablespoons unsalted butter, very soft
  • 1/2 cup sugar 1 large egg yolk
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose flour*
  • About 18 pieces of candy corn

*For chocolate cookies, reduce the flour to 1/2 cup and add 1/4 cup of unsweetened cocoa powder

Preheat oven to 350 degrees. Place butter and sugar in a medium bowl; beat until combined. Beat in egg yolk, vanilla, baking powder, and salt. Add flour, and mix until a dough forms. Scoop out level teaspoons of dough, and roll into balls (chill dough briefly if it becomes too soft). Place balls on baking sheets, 2 inches apart. Bake, rotating sheets halfway through, until edges are firm and cookies are dry to the touch, 10 to 12 minutes. Remove from oven; gently press a candy corn into center of each cookie (surface of cookies may crack slightly). Cool on sheets 1 minute; transfer to a rack to cool completely.

We started out our trick-or-treating adventure in our neighborhood. Since Munchkin was little Fankenstein, I decided to be Frankenmommy for trick-or-treating.

My friend Paul, Munchkin’s godfather, came along with us and was dressed like a Psych professor, AKA his future self.

Munchkin was a trick-or-treating champ. He climbed the stairs, rang the bells which he could reach and waited patiently for people to come out with candy. He especially liked when he was able to chose his own candy out of the bowl.  We got a ton of great candy and one house was even giving out bubbles which Munchkin was super excited for.

After Tommy got home from work, we headed out to Long Island to do some trick or treating with Arianna.  By that time, Munchkin was getting cranky and coming off his sugar high, so we cut the trick-or-treating short and got some dinner at Houlihan’s. I had the Corriander Grilled Salmon, which was amazing.  It was grilled Salmon with delicious mashed red potatoes and grean beans in a Chili butter sauce. Tommy had the Pot Roast which was also delish.

After dinner we headed home. We were all so tired that we pretty much passed out as soon as we got home. For me that means I fell asleep with all that Frankenmommy makeup on.  My skin will be thanking me for it later.

Now it’s time to get back to reality and start getting ready for school tonight. I’m bringing in Munchkin’s candy to share with my class because we don’t need any more sugar in our diets.

Did you go/have trick-or-treaters? What’s your favorite Halloween candy?

Candy Corn Fudge

Since I promised to be back with a yummy Halloween treat, here I am! So far the weather in New York is already yucky, but no snow yet. Cross your fingers that the storm lets up before tonight. Mama wants to get her party on!

Anyway, I found a recipe for candy corn fudge a few weeks back on Pinterest.  While I loved the idea of candy corn fudge, I didn’t love the recipe I had found, so I kept looking.  Since my Google skills are obviously amazing, I found this recipe.  I liked the fact that it wasn’t just all sugar and sweet, but it had a bit of salt and a bit of tang.  Sometimes the sweetness of fudge overwhelms me, so this recipe seemed like a good solution to that problem.

Candy Corn Fudge

  • 8 oz cream cheese, at room temperature
  • 2 cups confectioners’ sugar
  • 2 tsp pure vanilla extract
  • 12 oz white chocolate
  • 2 cups mini pretzels
  • 1 cup craisins
  • 1 cup candy corn

Line an 8- or 9-in. square pan with 2 sheets of parchment paper, leaving an overhang on all sides. Beat the cream cheese and sugar in a large bowl until smooth, about 2 minutes; beat in the vanilla. Meanwhile, melt the chocolate in a double boiler or microwave. Add the melted chocolate to the cream cheese mixture and beat until smooth, 1 to 2 minutes. Fold in the pretzels and craisins. Transfer the mixture to the prepared pan and top with the candy corn. Refrigerate until firm, at least 2 hours and up to 2 days. After the fudge has set, using the overhangs, transfer the fudge to a cutting board and cut into 1-in. pieces.

There are also some candy corn cookies in the plans for tomorrow night.

Enjoy your weekend and stay warm and dry in you’re in the path of the Nor’easter!

What’s your favorite Halloween treat?

Will Workout for Peeled Snacks

I can home yesterday to two huge packages waiting for me. One was my new wheel, so I’ll finally be able to drive like a normal person instead of on my spare.  As exciting as getting the wheel was, the other box was even more exciting.

Peeled Snacks are organic, dried fruit snacks that don’t have any added sugars or oils. Not to mention that they are super yummy. I got the Family Size Farmer’s Market Trio, which is raisins, cherries and apples and the Organic Fruits Variety Pack, which gives you two individual sized pouches of pineapple, mango, apricot, cherry and apple. They are sold at most Starbucks locations, which is where I tried them for the first time.

I ordered the snacks thanks to a program called Earndit.com.  If you exercise outdoors and have a smartphone or a Garmin to track your mileage, you can sign up and earn points for your workouts that can be redeemed for lots of different rewards, including the Peeled Snacks. Thanks to Earndit, I was able to get all these yummy snacks while only paying for shipping. If you’re a runner, I highly recommend it because it’s totally free and you get to earn cool rewards for getting your workout in.

I ordered these with Munchkin in mind because, just like me, he is a huge fan of raisins, craisins and other dried fruit. They are also a great alternative to candy and other sweet snacks which we will be flooded with come Monday.

Speaking of Monday, who is exciting for Halloween? I know I am! We are going to some Halloween parties on Saturday, so I’m really hoping this snow and rain they’re calling for will not really happen.  Parading around in a Halloween costume in the snow does not exactly sound like fun, especially when I was only wearing a light sweater last year.

On Monday, I’m taking off from school so I can go trick-or-treating with Munchkin. We are going to do the trick or treating in our neighborhood earlier in the afternoon, because we are going out to Long Island to trick-or-treat with Arianna after Tommy gets off from work. It’s her first Halloween and I can’t wait to see the cutie pie in her costume!

I’m also planning on making Candy Corn Cookies and fudge, so I’ll try to be back before Halloween with an update on those.

This weekend is also move in weekend for Tommy into his new apartment, so I have a feeling we will both be running around like crazies all weekend.

I gotta get some laundry and cleaning done so I can start on the fun stuff, baking!

Have an awesome Halloween weekend!

What are your favorite sweet snacks? Do you celebrate Halloween?
