Meatless WIAW

Sooooo, I’ve been really bad with taking picture of my food lately, but since the start of Lent and the end of meat in my life, I’ve been snapping away. Soooo, that means it’s time for a WIAW! These are just some of the things I’ve been eating since going veggie. It has been way too long since I joined in this partay and thank to Jen for hosting!

First up, one of my favorite new finds at Trader Joe’s – salmon burgers. They come frozen, but completely raw and I just throw one on a skillet and cook it up. Top with some sriracha and a side of veggies and you’ve got an amazing lunch/dinner

Speaking of Trader Joe’s, I’ve also been enjoying their pre-made sushi. I love that they use brown rice!

My number one new favorite thing in life is the Almond Coco Loco Chobani. If you can find these in your supermarket, jump on them. They are like dessert in Chobani form.

Another thing that I’ve been slightly obsessed with are English cucumbers. I have been eating these as a crispy treat with Chiptole Pepper Hummus. Delish!

This is Vegetarian Duck with Mushroom in Garlic Sauce from Chai Thai, where we went for dinner over the weekend. I’m not sure where vegetarian duck comes from, but it might just be heaven.

Lox are one of favorite things to get when we go out for bagels for breakfast, so I decided to recreate it at home. Not as great as it would be on a fresh bagel, but not too shabby either. photo(25)

So these are my meatless eats so far. I thought that I would miss eating meat, but it’s been a week and I haven’t had a single craving. I always had a feeling that I would do well as a vegetarian. I think that Lent will show me that I don’t really enjoy eating meat as much as I thought I did and that veggies are my BFFs.

Simply Snackin

Since Tommy and I started dating a bit over two years ago, he always jokes that I taught him to eat tons of different foods, like sushi (which he swore he hated when I suggested it for our first date) and Thai, and he taught me to eat jerky. I still remember the first time he bought jerky with me there. We were at the checkout in Target where he picked up a bag, and I said I don’t like jerky. I didn’t like jerky until we got to the car and he convinced me to try it, and so started my love affair with jerky. It was my snack of choice on the road, and a much better option than most gas station food.

When I was asked to try out a new gourmet line of Simply Snackin dried meat snacks, I knew I couldn’t let the opportunity pass me by. I received two bags of Simply Snackin, one beef and one chicken.

Simply Snackin is not your standard jerky. It combines traditional meats, with not so traditional add ins, to get flavors like Beef Sirloin with Cranberries and Blueberries and my personal favorite, Chicken Breast with Black Bean Salsa. I was a bit unsure of the fruit and meat combos at first, but they are soo good! The flavors range from savory, to a little sweet and spicy – something for everyone.

A Good Week WIAW

Hi I’m Sylvia and I love to eat! (As if you didn’t know that already) I love WIAW because it lets me look back on what I ate over the week and think to myself, damn I ate some good stuff. Thank you Jenn for being a genius and inventing WIAW. You rock lady! Now let’s move on to the good stuff I ate, because there is quite a bit of it!

 

I shall start with my favorite thing of the week – Thai Peanut Spaghetti Squash. It was so good that I had seconds and ate it for breakfast the next day. No shame!

Numero dos on the list is this watermelon, arugula and Feta salad. Light, refreshing, tasty…the perfect summer salad.

Sushi is my year-round staple. I could eat it every day, but my wallet prevents that from happening. If I ever win the lottery, I’m hiring a personal sushi chef.

Dippy eggs are another S4L – staple for life! Luckily, I make a mean dippy egg so no personal egg chef required.

Let’s move on to the indulgent snackage. I couldn’t resist the Salted Caramel Sauce that I got in this month’s Foodie Pen Pals package. It was calling my name from the pantry, so I gave in. I had it with apple slices, so it basically cancelled out the caramel sauce, right?

And you can’t call it a good week if there is no fro yo involved. End.of.story. There were actually two fro yo trips this week, so you know it was a goooood one!

Lastly, I leave you with an inquiry…

Has anyone ever tried coconut milk yogurt? I only bought one on my last trip to Whole Foods and it took me about a week to try it, and when I did it was chunky and kind of weirdly textured. I wasn’t able to make out the date on the back, so I’m not sure if it’s just an acquired taste, or did I eat expired yogurt. Help?!

WIAW Kool-Aid

Well we’ve come to the last Wednesday of July and I cannot believe that time is flying by soo quickly! I’m not ready for August people! Since it’s Wednesday, it’s WIAW time and I’ve got some good eats and good fitness to share, so let’s get to it!

Are you getting sick of seeing quinoa egg bowls, yet? I’m not sick of eating them and don’t think it’s possible to get sick of this deliciousness!

This is another amazing breakfast. Dippy egg, two slices of Oatnut bread, homemade guac and broccoli slaw. My food processor makes the best guac hands down. It same out smooth and chunky all at the same time, not to mention it had quite a bit of kick.

As if I didn’t get enough avocado from eating a huge bowl of guac in two days [I had help!] I made chicken salad stuffed avocados again.

I had this amazing meal at Carlucci’s when we were in Philly for the weekend. It’s shrimp and asparagus skewers on a bed of veggie “pasta.” I had to stop myself from licking my plate, this stuff was so good!

And what would a WIAW be without sushi, right? We went out for sushi, post WOD yesterday and it was mighty tasty. Of course, the boys started digging in before I could snap a picture. Guess they were hungry?

I have also been snacking away on my NatureBox goodies all week. The Sunny Trails is like crack. I.could.not.put.it.down!

We also stayed hydrated this week with our Camelbak bottles. Munchkin got his first Camelbak this weekend because he kept stealing mine, and sometimes I don’t like to share. ;) A hydrated mama is a happy mama.

I also drank the Kool-aid this week. Not this guy..

But the Crossfit Kool-aid, and let me tell you, it is some delicious stuff. I’m still in the Foundations portion of Crossfit, but I am in love. Yesterday was my second fondations class and we learned the proper forms of some moves before doing another mini-WOD.

We practiced proper form for dead-lifts, presses, push presses, burpees and ab mat sit-ups. It is such an amazing feeling to finally get the proper form of a move down after doing it wrong for a million times. The dead-lifts owned me, but I owned the burpees. Yes, you read that correctly, I owned the burpees, and I think I might even like them! See, told you, Kool-aid!

Our mini-WOD was AMRAP:

  • 5 burpees
  • 10 dead-lifts
  • 15 sit ups

I got through 2 1/2 rounds and felt amazing afterward. Sore. Sweaty. Amazing!

Day Off WIAW

Yesterday was the best kind of Tuesday – a no work Tuesday! Even though the weather wasn’t great, I made the best of it and Munchkin and I had a great day. I started off the day with a quick run – 2 miles in 27 minutes.

And since it is Wednesday, I will be sharing my yummy eats thanks to Jenn and WIAW!


My after run breakfast needed to be something cold to cool me down. Cottage cheese, farm fresh strawberries and Love Grown Sweet Cranberry Pecan.

After breakfast, Munchkin and I braved the rain and headed out to Long Island to go to the Long Island Children’s Museum. We had an awesome time and had snack time while there. Two Clif Kid Z bars – one for me, one for Munchkin.

I also drank a Cheribundi juice on the way home. It was my first time trying Cheribundi and I was pleasantly surprised. It tasted great and I will be picking up some other varieties of the juice to try out.

After the museum and running a new errands, I came home famished. I wanted something warm, quick and yummy. I had been craving quinoa for quite some time, so I threw together a quick quinoa and veggie dish – quinoa, cauliflower, broccoli, carrots, bell peppers with some soy sauce and spices. It totally hit the spot!

After Tommy got home from work, we headed out to run some more errands. I had to stop at work to pick up some paperwork that I have to bring to court in the morning and we did some shopping for my Foodie Pen Pals package. Rachael, get ready! We had to fuel for our errand running in the form of Starbucks iced coffee.

We stopped by Stanley Pierogi to stock up on pierogis and enjoyed some Potato and Spinach pierogi for dinner. Yummy!

Dessert came in the form of Justin’s peanut butter cups. I am a huge fan of all the Justin’s nut butter and these PB cups do not disappoint.

There was also a banana eaten somewhere during the day, but it didn’t get a picture before getting in my belly. Overall, I had a day of pretty good eats and snacks. Sensible snacking achieved!

What’s the best thing you ate yesterday?

Sensible Snacking WIAW

Let me start off by saying Happy National Running Day! Lace up those sneakers and get a few miles under your belt. I know I’ll be out there this afternoon!

When I saw what Jen had up her sleeve for June’s WIAW, I thought to myself, now this is something I can be good at. Serial snacker over here!

 

Luckily, I’m usually a pretty sensible snacker and usually turn to fruit when I’m feeling snacky if there is no chocolate in the house, of course. Let’s get to the eats!

Breakfast was packed to the brim with strawberries and therefore DELICIOUS!

Kashi Strawberry Fields cereal, topped with freshly sliced strawberries and with the last strawberry muffin on the side. Those babies went quick!

Honest Tea was on sale at the supermarket this week, so I picked up a few or 10. They are my favorite iced tea. Not too sweet, not too bitter, just right!

When I got home from work I was starved since I didn’t bring lunch with me. I had some stuffed cabbage that my mom had made the day before.

It might not look too hot, but trust me this stuff is good. We Polaks love our cabbage! ;)

I was in the mood for something on the sweeter side after finishing my lunch, so I turned to sensible snack numero uno…grapes!

After my food settled, I decided to go for a run. Even though I was still super sore from Sunday’s workout (which I’ll be sharing manana) I pushed through to finish 2.15 miles in 30 minutes. Not my best, but not my worst!

After my run, it was time for dinner. I was in the mood for something packed with veggies, but not a salad. I sauteed spinach, green peppers, tomatoes and black beans which I topped with a dippy egg.

And of course no day is complete with just one snack, so snack numero dos came into play after Munchkin hit the sack and mommy had some time on the computer.

Banana with half a packet of Justin’s Honey Almond Butter. The rest of the packet may or may not have gone directly into my mouth. So good!

The only things missings from my day of eats are two cups of coffee and a whooole lot of water. I am trying to stay on top of my June goals!

Where do I even begin? I was spoiled this month big time!

The Strawberry Fig Syrup is absolutely delish. I have been using it to top my waffles for breakfast in the morning and it an awesome replacement for Maple Syrup. The bottle also says you can top ice cream with it as a dessert which I need to try!

I haven’t had the chance to try these two out, but how amazing does a big bowl of veggie soup with cornbread on the side sound? I need to make this for dinner, and soon!

Yankees v. Royals

Around noon yesterday, I got a phone call from Tommy asking if I wanted to go to the Yankee game becuase someone at work was giving out tickets. Even though the weather wasn’t looking great, I was super excited to go. I had never been to a Yankee game before, let along a Yankee game in the brand new stadium that opened up last year.

The new stadium is really nice, and I feel the Yankees did a really good job with building a new park and playground in the place of the old stadium. There’s even a sweet looking track which I wouldn’t mind running.

We decided to drive to the stadium and ended up getting there super early because there was no traffic. When we got to our seats, the grounds workers were still fixing the field which I thought was really cool.

We took a walk around the stadium to get some drinks and snacks. I was surprised by all of the different food options they have now. We went the typical baseball game route with beer, I got a Blue Moon, peanuts and pretzels.

Next time we go to a game, I am getting the nachos because they looks amazing. The guy in front of us got them twice and they look like real restaurant nachos with slasa, guac, and real melted cheese.

The game was a lot fun. The Yankees were playing the Kansas City Royals and won 8-3. I am obviously their good luck charm.

My goal going into the game was to do the wave, and we did it twice!

The weather held out for the whole game and we ever got to see a gorgeous purple and pink sunset.

Tommy and I were also hoping to get on the Kiss Cam (We’re corny I know) but they didn’t have one at all! There’s always next time!

Fingers Crossed WIAW

First things first, before proceeding to read the rest of this post, please cross your fingers and keep them there until about 10PM tonight. Today from 6PM to 10PM, I will be taking my wonderful 4hour Wills, Trusts and Future Estates final. If I do well, free wills for all! ;)

Enough on the law school mumbo jumbo, let’s get to the good stuff..the eats! Happy WIAW everyone!

Yesterday consisted mostly of work and studying, but I still managed to eat pretty well.

Waffles have become my go to breakfast lately. If you haven’t noticed in the past couple of WIAWs. They are good, versatile and one of the things that I know Munchkin will eat with a smile. Yesterday’s waffle was a Van’s Whole Wheat topped with Justin’s Hazelnut Butter and a banana. I may or may not have drizzled some maple syrup on top after the picture was taken.

Court was the first thing on my list yesterday and of course I forgot to bring quarters to feed the Muni-meter. The meter is supposed to take credit/debit cards also, but I have yet to encounter one that does so without giving me an error message. Since I needed quarters and only had a $20, I decided to buy myself some juice and get change at the same time. I picked up this little gem…

and let me tell you, big mistake on my part. I didn’t bother reading the label (or looking at it apparently, how did I miss the lemon and raspberry picture?) and thought I had gotten a bottle of grapefruit juice. Fail. This was probably one of the worst juices I’ve tried in a long time. It horrible artificial sugar taste and I didn’t take more that two sips of it before it went into the trash. Lesson of the Day: Read labels!

I was lazy and didn’t feel like packing lunch and didn’t feel like spending money to buy lunch either. Instead, I snacked on a Clif MoJo bar and a cup of coffee and held off on lunch until I got home around 3:30. I loved the coconut flakes in this bar!

Lunch/Dunch/Linner consisted of a rogal with butter and a side of orange. A rogal is the Polish version of a croissant and tastes a bit different than its French counterpart. Wikipedia just informed me that rogal is actually translated to Kifli. I grew up eating this delish crescents for breakfast and lunch and I still love em!

I threw together a stir-fry for dinner. Nothing to exciting – chicken, asparagus, red bell pepper, shallots, garlic and zucchini. I served it over orzo and it made for a yummy, filling dinner.

My post dinner snack was apple donuts! Apple donuts are actually just apples with the center cored out, but doesn’t calling it a donut make it seem yummier…maybe.

Munchkin enjoyed his apple donut topped with some Fruit Loops. He was very intent on getting them perfect before eating. Silly guy – it all ends up in the same place anyway!

The Beginning of the End

With my last day of classes yesterday, finals season is officially upon us. Only two weeks, two exams and two papers stand between me and glorious freedom. So it’s time to hunker down and hit the books.

…with some snacks of course. Can I just say how amazing these quinoa clusters are. I’ve tried the Cranberry Cashew and the Chocolate Seas Salt and neither flavor disappointed.

The ingredient list isn’t half bad either. Especially for a sweet, chocolatey snack!

I wanted to apologize in advance if I go MIA, which may happen for a bit, but I’ll be back refreshed and ready to get my blog on!
