Back to School Shopping

I’ve realized that on the days I don’t feel like cooking I avoid the kitchen at all costs, but when I get in that kitchen I could stay there, playing, for days. Yesterday was one of those days where I spent most of my day in the kitchen and I loved it.

I started the day with some Van’s Blueberry Waffles.  I covered those babies in PB&Co’s White Chocolate Wonderful PB and topped with banana and chocolate chips. One waffle was my breakfast, the other was my dessert.

My workout came after breakfast and I headed down to my basement.  I did an 15-10-5-3-1 interval workout, switching between my elliptical and my exercises bike.  I added workout log tab to the top of my page where I will be keeping track of my workouts.  I feel like I’m very quick to skip my workouts when I feel a little busy, and think this will help to keep me more accountable.

For lunch, I planned on using the leftover roasted potatoes from Sunday’s BBQ to make a potato salad, but when I opened my fridge a ton of different things jumped out at me. I ended up making my normal potato salad with a twist.  I cubed the potatoes, added some hard boiled eggs, shredded carrots, red onions and avocado.  I mixed it all together with a little mayo and some salt and pepper.

After lunch, Munchkin and I ran some errands and enjoyed the nice weather that has rolled in after all the rain.

For dinner, Tommy has been telling me that he is craving spaghetti with meatballs for days, so I finally obliged.  I looked at a bunch of different recipes, but finally just channeled my inner Italian Grandma it and came out with a really good tomato sauce with some amazing tasting meatballs.

Spaghetti and Meatballs

Meatballs

  • 1 lb ground beef
  • 1 lb ground chicken
  • 1 lb ground turkey
  • 1 1/2 cups bread crumbs
  • 1/2 cup Parmesan cheese
  • 1/2 cup milk
  • 2 eggs
  • 1/2 cup water
  • 2 teaspoons oregano
  • 2 teaspoons garlic powder
  • 3 teaspoons salt
  • 2 teaspoons ground pepper
  • olive oil, for drizzling

Sauce

  • 2 28 ounce cans of crushed tomatoes
  • 3 tablespoons tomato paste
  • 1 15 ounce can of tomato sauce
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1/2 teaspoon red pepper flakes
  • 2 teaspoons oregano
  • pinch of sugar 
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 pound of pasta. [I used penne because its more child friendly]



Preheat oven to 400 degrees.  In a  large bowl, combine all of the ingredients for the meatballs, using your hands to knead it all together. Form mixture into 2-inch meatballs and place on broiler pan.  Drizzle each meatball with a little olive oil and bake until golden brown and cooked through, about 30 to 35 minutes.  



In a large pot over medium, heat the olive oil.  Add the onions, season with salt and pepper, and cook until the onions are translucent, about 5 minutes.  Add the garlic, tomato paste, oregano and pepper flakes and cook for 1 minute more, stirring frequently.  Add the crushed tomatoes, sauce and a pinch of sugar.  Season with a little more salt and pepper, cover and simmer on low for 25 minutes.  Taste for seasoning.  Add the cooked meatballs and simmer for another 5 minutes or so.  Serve hot over cooked pasta. Sprinkle with Parmesan cheese before serving.

After dinner, we headed over to Target to get some shopping done.  I replenished my cereal supply with some Kashi and Target Brand Muesli.  I also bought school supplies, including a Lemon Scented Hello Kitty Folder. Yes, I am going into my second year of law school, not kindergarten. Last semester, I also had a Hello Kitty folder and during a conference with my professor I got asked if my son likes Hello Kitty, to which I replied that he’s not a fan, but I am.



I also got Munchkin a huge lollipop because I felt bad for leaving him at home, but he had just fallen asleep when we were getting ready to leave. Needless to say he enjoyed it and will be enjoying it for the next week because its so big. 



Note to self: sugar in the evening is not a good idea. Munchkin was wired until about 10:30, making me a not so happy mommy.

Now, I am enjoying an iced coffee with Caramel Macchiato creamer along side a bowl of my new cereals.  It’s going to be a good day. Happy Wednesday everyone!
