Rainy Day Zucchini

Yesterday, Munchkin and I hit up the park, but our trip ended rather quickly when it started to rain.  I’ve never seen a playground clear out that fast.  As soon as the first drops of rain started falling, all the kids were scooped up and taken home. 


When we got home, Munchkin went down for a nap so I took the time to clean up a little and to start on dinner.  I brought home a bagful of zucchini this weekend, so I decided to make stuffed zucchini.  Dinner was really good and I was really surprised because I pretty much just threw a whole bunch of ingredients together and hoped for the best. It even got a two thumbs up from Tommy which is always the sign of a really good meal.


Stuffed Zucchini



Ingredients: 

3 zucchini
2 TBSP olive oil, divided
1 onion, chopped
3 cloves garlic, minced
1 package mushrooms, chopped
1 lb. ground turkey
2 tomatoes, seeded and diced
1/2 cup grated Parmesan cheese

1/2 cup Mozzarella cheese
2 eggs, lightly beaten
1/2 tsp. salt
1/2 tsp. black pepper



Directions:

Cut zucchini in half lengthwise.  Scoop out insides, leaving a shell about 1/4-in. thick.  Reserve about half of the insides.

In a medium skillet over medium-high heat, heat half of the olive oil.  Saute the onion and garlic until tender, about 4-5 minutes.  Add the mushrooms and reserved zucchini insides to the skillet and saute until tender.  Remove from the heat.

Heat the remaining oil in a large skillet over medium-high heat.  Crumble in turkey and cook until lightly browned on all sides, stirring occasionally. Add in diced tomatoes and cook until tender. Stir in the onion and mushroom mixture.   Drain off any excess fat, remove from heat, and set aside to cool.

Preheat the oven to 375 degrees F.  Once the mixture has cooled a bit, mix in cheese, egg, salt and pepper.  Fill the zucchini shells with the mixture.  

Place the filled zucchini shells in the pan and bake for 20 minutes.  Remove zucchini from the pan and serve immediately.  Serves 2-3.


After dinner we went to visit Tommy’s god daughter, Arriana.  She is almost 9 months old and such a cutie! It’s super cute to watch how Munchkin plays with her and gives her kisses.

I also got to try the world famous Mac and Cheese that I’ve been hearing about for months.  Tommy has told me forever that Arriana’s mom makes the best Mac and Cheese he’s ever tried, and he wasn’t lying.  It was soo good.  I need to get her to share her recipe with me because its that good.

We got home pretty late because as usual there was traffic on the LIE.  Munchkin took a quick bath and I got to watch my guilty pleasure, Teen Mom.

Since the sun is back out today, Munchkin and I will be heading outdoors shortly. Hope you guys have a great Wednesday!
