Leftover-less Dinner

I spent this gloomy day packing and cleaning up the house before our Pennsylvania adventure.  My new bag is awesome and I was able to pack all of my clothes and Munchkin’s stuff with room to spare.

Since we are leaving tomorrow in the early afternoon, I decided to make something for dinner that wouldn’t leave lots of leftovers. On my last trip to Trader Joe’s, these burgers caught my eye and I thought today was the perfect day to grill em up.

I followed the serving suggestion on the box and made some guacamole to go on the burgers.  I am a huuuge fan of avocado and would put it on anything and everything if I had a choice.  I make my guacamole with Haas avocados, tomatoes, red onion, garlic and lemon juice.  I learned the easiest way to take apart an avocado is to slice it down the middle, remove the pit by stabbing it with a knife and wiggling it out.  Next, I cut the avocado up while it is still in its peel and scoop it out with a spoon.

I remove the seeds from the tomato and dice it along with the onion. I grate the garlic on a little grater and pour the lemon juice over the top to prevent the avocado from browning. I also add salt and pepper to taste and mix everything together and enjoy. 🙂

The burger itself was just okay.  The flavor was good, but it was a little dry for my taste. I might’ve over cooked them a little.  It was really good with the guacamole, tomato and spring mix added on a sandwich thin. 

Now I get to go do the dishes since our dishwasher broke today.  All of our major appliances seem to be dying on us!
