Week[end] in Review

This weekend flew by super quick, as usual.

We spent Friday lounging around in our pool. I wish I knew how to stop Munchkin from drinking the dirty pool water.  It seems to taste a lot better than water from his cup. Maybe I’m missing something.

Between running afternoon errands, we had sushi for dinner.

We headed up to the Poconos on Friday night, so that we could get up bright and early on Saturday morning to build.

First I single-handedly built Alex’s big wheel.  I’m super proud of myself and it wasn’t as easy as it looks. There were about 500 different steps and screws to screw in.

We also got most of Munchkin’s new swing set set up.  The swings are in working order, but the playhouse section of the swing set is still under construction.

Saturday night, Tommy and I got to have some time to ourselves, so what better way to spend it then by going for ice cream.  We headed to the Hill Top Drive In, a place I’ve passed by hundreds of times, but never had the chance to try.

As seen by the steady line out front, the ice cream is good, real good.

We dug in right away and didn’t realize I didn’t take a picture until we were almost done.

Tommy got the strawberry cheesecake and I got cake batter.  I was really looking forward to trying cheesecake soft serve, but they were all out.  Hopefully next time!

We also watched the Lincoln Lawyer.  It was a really good movie.  I highly recommend it!

On Sunday I didn’t do much but read the Help.  It is so good, I really have a hard time putting it down, especially now since I’m almost done.  I can’t wait for the movie to come out in August.

I did take a break to make a yummy, super easy and healthy dessert.  We made some baked peaches with almond meringue topped with strawberries.

Baked Peaches

Ingredients

  • 5 peaches
  • 1 teaspoon sugar
  • 1 egg white
  • crushed almonds

Directions

Preheat over to 350 degrees.  Wash the peaches, cut in half and remove the pit.  In a separate bowl, mix the egg white and sugar until it creates stiff peaks.  Fold in crushed almonds.  Place the eggs white and almond mixture in the holes left from removing the pits.  Bake for 15 minutes or until peaches are tender.  Serve with strawberry sauce.

I ate like four of them. They are seriously good.

Now Munchkin and I need to find ways to entertain ourselves indoors because it is a billion degrees outside and will stay like this all week, topping out at almost 100 degrees on Friday.  Stay cool everyone and enjoy your Monday!
