Green Pasta and Country Music

Yesterday was a green pasta kind of day.  I whipped up the fastest homemade pasta dish I’ve ever tired and it was so yummy. I found it through Pinterest and takes about 15 minutes to prepare.

Creamy Avocado Pasta

Ingredients

  • 2 medium, ripe avocados
  • 1 lemon, juiced
  • 5 cloves of garlic (use less if not a big fan of garlic)
  • 4 tbsp extra virgin olive oil
  • 12 oz pasta
  • salt and pepper to taste
  • parmesan cheese to top

Directions

Bring several cups of water to a boil.  Add in pasta, reduce heat and cook until Al Dente.  Meanwhile, make the sauce by placing the garlic, lemon juice, oil and avocado into a food processor.  Process until smooth and creamy.  When pasta is done cooking, drain and place in a large bowl.  Pour on sauce and toss until fully combined. Top with Parmesan cheese.  Serve immediately. Makes 4 servings.

Note: This dish doesn’t reheat well because of the avocado in the sauce, so eat it all!

After we filled our bellies with green pasta, we headed over to Ikea to do some shopping and eat their delicious cinnamon buns.  They seriously give Cinabon a run for their money and they one cost a dollar.

Munchkin got to run around in the children’s area, trying out different furniture.

I love walking around Ikea and getting different ideas for my future house.  Their rooms are always so fun and modern. While we were in Ikea there was a thunderstorm which created a bunch of rainbows as my Facebook page later showed me.  But because the rain passed, the sky on the ride home was gorgeous.

This song has been stuck in my head for weeks.  I heard it on the radio in Pennsylvania, didn’t catch the name and could really remember the words.  Yesterday while I was doing my elliptical workout, it came on on Pandora and made me so happy.  Needless to say, this is the newest addition to my iTunes library. I always thought I wasn’t a fan of country music, but the more I hear of it the more I love it.  Don’t tell anyone, they might run me out of New York City. 😉
