Return to Cooking

Friday was a super busy day for me.  I finally finished everything that I had to clean and declutter.  In between my cleaning, I actually had time to finally do some cooking.  Between being on vacation and my boyfriend being away, I feel like I haven’t cooked in weeks. 

I started the morning with a bowl of overnight oats, which I hadn’t made in a while.  I mixed half a cup of oatmeal with half a cup of both milk and Chobani 2% Greek yogurt.  This morning I added two spoons of Polaner Blackberry All Fruit preserves and a cut up banana, mixed and enjoyed.  It’s been a while since I had oatmeal for breakfast but it will be making a return appearance very soon.  

I was going to make grilled pizza on Wednesday, but the tornado warnings and ominous clouds in the sky kept me indoors.  Since I had all the ingredients waiting in the fridge, I decided to fire up the grill and make it today.  The pizza came out a lot better than my first attempt a few weeks ago, I didn’t burn it at all. 

It was, however, way too much food for myself and munchkin and half the pizza is in the fridge.  I really don’t know how to cook for one person and I usually don’t really like to eat leftovers, which is why I haven’t been cooking at all lately. 

After I finally had everything cleaned and organized to my liking, I decided it was time to take a trip to Trader Joe’s to buy some groceries because our fridge has been practically empty all week.

I bought a lot of good stuff that I’m really looking forward to eating.  I also bought one of their pre-made salads to eat for dinner.  I got the Mango, Red Quinoa and Chicken Salad.  I usually don’t like fruit and meat together, but the combo of mango and spicy chicken and the coconut chili dressing was awesome.  It was a little spicy, sweet and savory all at the same time and I really enjoyed it. 

We also stopped by Sports Authority because I had a $10 cash card that expired today.  I bought a really cute hot pink Nike duffel bag because I don’t have a duffel bag of my own and always have to use my dad’s bag when I go somewhere.  Since it was only $15 out of pocket, I think it was a pretty good deal and a really handy thing to have.

Now that munchkin is fast asleep, I am relaxing a little bit before I head to bed.  Hope you enjoy your weekend!
