Oatmeal Craisin Cookies

Happy Thursday everyone! Only one more day until the holiday weekend! What are your plans for the holiday weekend? I’m going to be in the Poconos and we are planning on watching fireworks at Shawnee Mountain.  I can’t wait!
Yesterday, Munchkin and I took our bike out for a real ride and we both loved it.  He didn’t even protest having to wear a helmet.  The only down side to the bike seat is that it gets difficult to pedal uphill because you can’t really stand up.  

Since I made oatmeal craisin cookies on Tuesday, Tommy keeps telling me that he wants more because they were so good.  Since they seem to be in high demand, I thought I’d share the recipe.

Oatmeal Craisin Cookies


Ingredients
  • 3/4 cup unsalted butter, room temperature
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup craisins
Directions
Preheat oven to 350 degrees F.


Beat the butter and sugar until creamy and smooth (about 2 – 3 minutes). Add the egg and vanilla extract and beat to combine. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Add the flour mixture to the creamed mixture and beat until incorporated. Stir in oatmeal and crasins. 
Bake the cookies for about 12 – 15 minutes or until light golden brown around the edges but still soft and a little wet in the centers. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.
Makes about 20 – 24 large cookies



Munchkin and I are heading to the Hall of Science today with my friend Yanette.  I’m pretty sure I’m more excited than Munchkin about going.  We used to go there every year when I was in elementary school and I haven’t been there in years.  Have a great Thursday!
