Cake Batter Pancakes!

Since I didn’t really get to spend Mother’s Day with my munchkin because he was with my parents, we had a special Mother’s Day breakfast this morning.  I had the recipe for Cake Batter Pancakes bookmarked for months and I felt like today was the perfect day to finally try it out.  I am a huuuge cake batter junkie.  I’m the person who while baking eats half the batter and complains of a stomach ache for the rest of the day.  I can honestly say that I usually like the taste of cake and cookies raw better then when they are baked.  Yea I’m a little strange. 😉

So I broke out my beloved Kitchenaid mixer and started combining all the dry ingradiants.  Everything was going great until I discovered I have no milk.  I used my google skills and found I can substitute regular milk for evaporated milk so the milk crisis was averted.

The pancakes were absolutely delish and super filling.  I put two on my plate but I couldn’t finish em.

Munchkin man is a pancake fiend.  He ate almost as much as I did. Every time he finished a piece he would yell more more!

Last night, since I was all by my lonesome and babyless, the boyfriend took me out to dinner at California Pizza Kitchen.  It was my first time there and the food was pretty darn good.  The place was super packed though, but I guess that’s expected on Mother’s Day.

I got half a Miso Chicken Salad and we shared two pizzas, the BBQ chicken and mushrooms, sausage and something. 

As usual we ordred way more than could fit in our bellies so I have half of my half salad waiting for me in the fridge.  After dinner we returned home to find that munchkin and my parents had arrived! Yay! We gave my mom her gift and she liked it. 🙂 And I got a really cute picture frame from the munchkin man. After I finish finals I am going to go on a picture printing spree because my room is filled with empty frames.  Munchkin’s baby album is only halfway done too so I need to get on that!

Now I get to get some studying in before I head out to the new park that was opened in our neighborhood so munchkin can do some exploring! Thank you so much to everyone who sent me Mother’s Day wishes you guys are too sweet! And Happy Belated Mother’s Day to all the mommies out there!
