A New Squash WIAW

It was a rough night at our house last night. Munchkin and I are both fighting colds and a sick baby is not a happy baby. It is actually Munchkin’s first cold ever in his life, so it’s extra sad to see him moping around the house. Needless to say, we didn’t sleep so well, and I’ll spare you the details, but we had a 4 AM sheet change last night. Not fun. Because of all the nighttime adventures, I decided to sleep in a bit today instead of blogging. But it’s not really Wednesday without a WIAW, so here it is. Better late than never!

April’s challenge is to eat an extra cup of veggies throughout the day. I think I did a pretty good job with that yesterday because breakfast, lunch and dinner all included veggies – DING!

Even though you can’t see the veggies in my breakfast, they were there. I promise! Egg white scramble with plum tomatoes and two slices of turkey bacon. A Chobani on the side to keep me fuller longer.

Lunch was a kitchen sink salad. Romain hearts, plum tomatoes, sugar snap peas, hard boiled egg and a veggie burger. The supermarket was all out of my favorite veggie balls, so I got them the burger in the same flavor. Topped off the salad with Newman’s Own Honey Mustard dressing. I love Newman’s Own dressings. I think I’ve tried almost all of their flavors and I haven’t had a miss yet.

Dinner came together on a whim. I had picked up a kabocha squash about two weeks ago and it had been sitting on top of my microwave since then, calling my name to make something with it. I like to buy new types of veggies at the supermarket and then try to figure out what to do with them and this was one of those purchases. I did some googling and found a lot of soup recipes, but I wasn’t in a soupy mood. Instead I cut the squash in half, scooped out the seeds and cut it into about inch long wedges. I tossed them with some olive oil, sprinkled with salt and pepper and baked for 25 minutes at 425. The result was soo good!

The squash reminded me a lot of sweet potatoes and the best part was that the you can eat it with the skin. No need to scoop out of peel the squash.I also baked up some chicken sausage to eat along side the squash. It was my first time trying chicken sausage and I gotta say – I am a fan. I really want to try some of the other flavors.

I had a after dinner snack planned for before my workout, but I got in bed with Munchkin to help him fall asleep and never made it out. I passed out around 9 PM and never made it to my workout. I guess my body needed the rest or it knew that I would have a sleepless night. Either way, it felt great.

  1. Extra veggies is definitely a good challenge! The best thing I ate today was some Jelly Bellies and some blueberry flax muffins I made at home! 🙂

  2. Oh no! I hope you and munchkin get better asap! I love trying different types of squash. They taste so good roasted.
