Leap Day WIAW

Happy Leap Day! February 29th only comes around once every four years, so it’s kind of an exciting date. Out of curiosity, I looked up some Leap Day traditions and depending on where you’re from, Leap Day might be a bad luck day, or the day you can propose to your boyfriend and he has to accept, or pay a fine! In some European countries, the tradition is that if your girlfriend proposes to you on Leap Day and you don’t accept, you have to buy her 12 pairs of gloves, to hide her ringless hands. Pretty funny, huh?

It’s also a good way to get a year’s supply of gloves..just sayin’ ladies!

Anywho, it is Wednesday, so that means it’s time so share yesterday’s eats!

Yesterdays eats were a little all over the place because I had quite the busy day. I didn’t really love my veggies, but I did love my fruit!

My day started with Eggs in a Basket. I thought up this breakfast during class the night before. Does anyone else daydream about what they’re going to eat next or am I the only wierdo? I ate breakfast while helping Munchkin “talk” to his cousins in Poland over skype. It’s so funny to see two little guys waving to each other through the computer.

My lunch was totally unplanned. I knew that I would be out of the office all day, so for the first time since I started working, I didn’t pack lunch. My bag was full of files and cases, and I didn’t have any room to spare. Luckily, just a block from the Brooklyn Court House, I found a Chipotle. I got a burrito bowl with brown rice, black beans, chicken, corn, tomatoes, lettuce and guac. Totally hit the spot. I love Chipotle!

When I got home from work, I wasn’t very hungry since I had a big lunch. I enjoyed a grapefruit which I thought was an orange, as a snack. Good either way.

One some time passed, I started getting a bit hungry so I rummaged through the fridge and found leftovers for dinner! I had the last Mexican Quinoa Stuffed Pepper with a side of berries and a nectarine.

During my class, I had a craving for something sweet. I have to admit that I am a bit addicted to this cereal and am glad that I finished it off last night. It tastes amazing, but isn’t exactly great for you. I also enjoyed a cup of green tea to finish off the night.


Wish me luck because I’ve got quite a day ahead of me. First off, I am meeting with a client today to serve as his translator while his lawyer preps him for trial. It’s my first time translating for something like this, so I’m a bit nervous. And as if the excitement at work wasn’t enough, I have a midterm this evening. Yikes!

Quinoa Stuffed Peppers and a Bit of Randomness

Since I am currently doing this…

this post is going to be a bit all over the place with things I’ve been wanting to share, but have had to put them on the back burner in favor of studying for midterms.

On Friday, I made vegetarian Mexican stuffed peppers. I broiled the peppers for 5 minutes and stuffed them with a quinoa mixture that I thought up. After cooking it in chicken broth with a teaspoon of chili powder, I mixed the quinoa with a can of black beans and 8 oz of salsa and stuffed the peppers. I topped it all off with some Mexican blend cheese and put it back under the broiler for a few minutes until melted.

I’m really enjoying trying out different vegetarian recipes because of Lent and meatless Fridays. Any ideas for me for this week?

On Saturday I indulged a bit and went to get a mani/pedi at a new nail salon that was renovated and reopened in my neighborhood. Since I had a gift certificate, I decided to splurge and get my first gel manicure, an OPI gel manicure to be exact. I chose A Grape Fit for my color.

This manicure is supposed to last for up to three weeks because its layers of special polish painted onto your nails and cured with a UV light. So far, so good. If it really does last three weeks then it will be well worth the $20 price tag. Don’t mind the plastic cow. 😉

We went to a Christening party for my cousin’s new baby, Tiana on Sunday. We all got to get dressed up and I can’t get over how adorable Munchkin looked.

Brunch at Fabiane’s

Sooooo, I hope you had a good weekend. My weekend started out with something I’ve been wanted to do for a long time. Saturday morning brunch!

I have been trying to bring Tommy to Fabiane’s since we started dating. Every time we pass by I tell him that’s the place with amazing creme brulee, and believe me it is banging. We are going to have to go back for the creme brulee though, because we were so stuffed from our brunch that we passed on a dessert. I can’t wait for the weather to warm up, because Fabiane’s opens up its windows and puts tables out onto the sidewalk. It’s a great place to relax on a warm day with a cup of coffee and people watch.

We started off our brunch with some caffeine. I got an iced coffee while Tommy got one of their iced blended drinks, a Caramel Granuccino. Now Tommy is not a big coffee drinker at all, and there are few things that he will actually drink that are coffee flavored, but he was raving about his drink.

We both went the sweet route for brunch. I got the French toast with strawberries which was delicious. The toast was thick and fluffy and the strawberries and whipped cream on the side made it feel like a decadent dessert.

Tommy got waffles which were also served with strawberries and whipped cream. They were really good too.

So good that Munchkin decided to steal the last waffle instead of eating his cream cheese bagel.

And that’s saying a lot because he loves cream cheese like no other person I’ve ever met in my life. Like he will eat it out of the container with a spoon if he can sneak it past us in the kitchen.

We left brunch with full bellies and smiling faces, but I still have a craving for that creme brulee. Hopefully, we will visit again sometime soon. I have a feeling we will, because Tommy is still talking about that Granuccino.

Raspberry Pancakes

Happy Friday everyone! As happy as I am that it’s finally the weekend, I’m not happy that the gorgeous weather from earlier this week has gone away and we’re stuck with rain and high winds for the weekend. What the heck mother nature?

I woke up this morning wanting pancakes. Well, I’ve been wanting pancakes since early this week, but I don’t have enough time to make em on workdays, so they had to wait until today. When I scanned the fridge this morning, I noticed that we had a big container of raspberries that needed to be eaten ASAP. Light bulb – Raspberry pancakes!

Munchkin is my official taste tester when I play around in the kitchen, because he is usually too impatient to wait for pancakes.

I found a recipe here, but I tweaked it a little to make it more my style.

Raspberry Pancakes (makes 5 pancakes)

  • 1/3 cup all purpose flour
  • 1/3 cup whole wheat flour
  • 1 tablespoon sugar
  • 1 scoop chocolate protein powder
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/3 cup plain Chobani Greek yogurt
  • 1 large egg, beaten lightly
  • 1 tablespoon canola oil
  • 1/2 cup skim milk
  • 1 cup fresh raspberries

In a large bowl combine flours, sugar, protein, baking powder and soda.  Set aside. In another bowl, whisk together yogurt, egg, oil and milk. Add to flour mixture; stir just until combined. Fold in raspberries Heat a griddle over medium heat. Drop large spoonfuls batter onto griddle; cook for 1 minute or until bubbles form on top. Turn and cook 1 minute more.


They weren’t the prettiest pancakes I’ve ever made, but they were one of the best tasting ones. I poured a bit of syrup over the top and dug in. I totally forgot that I have a jug of real maple syrup in the fridge and turned to Mrs. Butterworth instead. They probably would’ve been even better with the real stuff.

I know that I made a good breakfast when Munchkin finishes his own and tries to eat mine!

I have some fun stuff planned for this weekend. Tommy and I are going to brunch tomorrow and on Sunday I have a Christening to go to for my cousin’s new baby! I also have to do some studying because I have a dreaded midterm this week. Oh well, better than just having one final at the end of the semester.

Burger Guru

Yesterday was Ash Wednesday, which meant that if you’re a Catholic you’re not supposed to eat meat. With that in mind, Tommy and I went to dinner at the Burger Guru. Yes, burgers on Ash Wednesday.

We went in knowing that they have some meatless options because we quickly glanced the menu outside, but when we got handed menus, I was really surprised.

Aside from the regular beef and turkey burgers most places have, they have antelope, lamb and ostrich. We were curious so we asked our waitress and she told us that it’s actual antelope and ostrich.  She said that the ostrich tastes like chicken and the antelope like gamey meats, like deer. I wanted to ask her where they get the ostrich and antelope from also, but I didn’t want to seem like a fascinated kindergartener with a million questions. So I’ll ask next time instead.

We started out with Kalamata Kalamari as our appetizer. It was fried calarami and kalamata olives, served with a marinara dipping sauce.

For my burger, I chose the Veggie Burger which they make themselves out of beans and beets. On their menu, they list a bunch of different topping you can chose from, and premade topping combos. I got the Willamsburger on top of my veggie patty which was sauteed onions, mushroom and cheese. It was really good, but fell apart halfway through eating. It might’ve been because I always have trouble eating huge burgers, but I enjoyed it either way.

Tommy got a crabby patty which was really good too (I stole a bite). It was like a big crab cake in burger form. I also liked the name play on Spongebob’s crabby patties.

We also ordered a side of fries, which ended up being almost a bucket of fries- so big. They were fried with the skin on, which I like, and were very tasty. They were served with three dipping sauces, BBQ, spicy mayo and a Greek olive sauce.

We will definitely be back to try some of their other burgers, but on a day when meat is allowed. They also have a backyard which I would love to eat in during the summer. There’s something about eating outdoors that makes food taste better.

I also want to apologize for the dark photos. The lighting was a bit dim making pics hard to take. Tommy even help a candle up for better lighting for me. If that’s not love, I don’t know what is!

What I’m Giving Up WIAW

Am I the only one who is excited that Easter is only 40 days away. I can’t wait to make Easter baskets and possibly do an egg hunt for Munchkin this year.

With Easter being 40 days away, that means that today is Ash Wednesday and the beginning of Lent. I’ve decided that for Lent this year, I am giving up soda and chocolate. I’m going cold turkey with soda- all kinds, even diet. I’ve been trying to break my soda habit for a long time, so hopefully this will do the trick. As for chocolate, I had to give it some thought. I’m giving up chocolate, as in candy, but not other chocolate flavored things like cake and cocoa. I need some chocolatiness is my life!

Moving on to other Wednesday matters, its time for another edition of WIAW and this time I succeeded in packing in the veggies this time.

For breakfast I made a veggie scramble with spinach, tomato and peppers. I also topped it with ketchup after I took the pic and technically that’s a veggie, right? Just kidding!

Right after breakfast, I had one of the biggest scares of my life. I was in the kitchen making making myself lunch and Munchkin was in the living room playing. He started running towards me but was acting silly and ran right into the corner of the closet. The bump on his head grew in front of my eyes and I was terrified that he might have a concussion. Luckily we put some ice on it and Munchkin was ready to get back to playing. Not a fun way to start the morning!

For lunch, I made myself a sammich. Arnold’s Healthnut Bread with Prosciutto, American cheese, spinach and mustard. I brought a side of baby tomatoes and hummus to munch on throughout the day. I washed it all down with Honest Tea – my favorite iced tea ever! I also brought some almonds with me, but I never got the chance to eat them. There’s always tomorrow!

I came home after work with no idea of what to do for dinner. I was hungry and wanted something quick to eat before my class started so I made a wrap with a Morningstar Tomato and Basil Pizza burger, avocado, mozzarella cheese and spinach topped with salsa and warmed in a pan to make the cheese nice and melty. As my side, I had baby carrots, tomatoes and broccoli with some more hummus. I can’t get enough of the spinach artichoke hummus!

My sweet tooth kicked in after dinner so I made myself a pumpkin spice Vita Top and half a banana and a bit of chocolate syrup. Totally hit the spot.

Wish me luck on my first full day this week. Luckily, it’s the next to last full day so it makes it that much more barable!

and because he is a total sweetheart. As soon as I got in and the girls I work with saw my sicky face, they told me I should go home and rest. Since it was a holiday, no one would be going to court and there wouldn’t be much for us to do anyway.

So I called Tommy, asked him to turn around and home I went. It was great to spend the day with Munchkin. We started the day off with some photoboothing.

Please excuse my sicky facedness, but I thought we looked cute.

Then we ate some soup my dad bought us from the Polish deli. Mushroom noodle is what’s up!

Watched the Spongebob Movie on Nickelodeon.

And when Munchkin knocked out for his nap, I took the time to get ready for school.

I made myself a PB and banana quesadilla to take to school as a snack. Everytime I make a quesadilla, I can’t help but think of Napoleon Dynamite – Make yourself a dang case-a-dill-a Napoleon!

I stopped by Tommy’s on the way to school to drop off some meds for him because it seems like he is the next lucky person to be sicky and he just happened to be making chicken parm and he gave me some to go! He breaded the chicken in panko and baked it before topping with fresh mozzarella and sauce – so yummy!

Having to go to school for four hours seemed a lot easier when I didn’t have to spend 6 hours at work right before it.

Luckily, all I need to get through today is work because I have my online class which I can attend in my PJs and in bed if I please. I can say that I’m mostly better, except for my cough and pain in my lungs. Climbing the stairs out of the subway yesterday made me feel like my lungs were on fire – not fun. Hopefully, this will all pass soon enough and I’ll be back to myself!

Up and Down Weekend

This weekend had it’s ups and downs. After resting up for most of the morning and afternoon, I was feeling pretty good. I got my self together and made a yummy dinner on Friday night. I made Sesame Noodle Spaghetti Squash and Sweet and Spicy Pork Chops. It made for a very, very yummy dinner, so I think it’s only fair that I share the recipes!

Sesame Noodle Spaghetti Squash

  • 1 large spaghetti squash squash, baked and shredded into noodle strands.
  • 4 tablespoons Toasted Sesame Oil
  • 4 tablespoons Soy Sauce
  • 1 1/2 tablespoon White Vinegar
  • pinch of Garlic Powder
  • 3 tablespoons toasted Sesame Seeds
  • 1/2 cup diced Green Onions
  • 1/2 cup cooked & shelled Edamame
Combine sesame oil, soy sauce, vinegar, garlic powder and sesame seeds in a small bowl. Toss with spaghetti squash noodles. Gently fold in edamame and green onions at the end.

I was surprised how well the Spaghetti Squash held up. I bought the one I used for this recipe in October and had him lay out on my counter for all this time. Next year, I’m stocking up on squash when it’s in season and storing it in the basement to enjoy all winter.

On Saturday monring, I woke up feeling pretty darn good too. We took a family grocery shopping trip and I picked up a lot of good stuff. Tommy and I started looking into vacations we might want to take this summer – exciting stuff! In the early afternoon we decided to take a trip over to the piers for a walk since we hadn’t been there since the fall.

I was very excited to see that the next section with the Pepsi Cola sign would be open soon. Can’t wait until the weather is nice enough to spend lots of time there and take in the views!

As the day went on, I started to feel worse and worse. I medicated myself up and headed to bed early in hopes that I would feel better in the morning, but that didn’t happen.

I woke up on Sunday feeling the worst that I’d felt all week. Tommy drove me to the pharmacy that I used to work at and the pharmacist gave me some other medicine. When I worked there, I never went to the doctors. I would go talk to the pharmacist and they always knew what meds I needed to feel better.

I spent most of Sunday in bed sleeping and hoping that I would be all better by Monday and it kind of worked. I woke up this morning with no sore through. The only thing left bothering me is my stuffy nose and cough, but I think I can deal. I’m not sure if I can make it through all 12 hours of school and work that I have today, but I’m going to play it by ear. If I’m starting to feel crappy in the evening I’m going to skip class and just get the notes from a friend. I’d rather feel even better tomorrow than suffer through class and feel horrible tomorrow.

Sick as a Cat

I woke up this morning feeling sick as a dog cat. Stuffy nose, sore throat, chest congestion – the works.

Everyone in my office was really sick last week, and I thought I got lucky and didn’t catch their cold, but looks like it just took a lot more time to get to me. Luckily, after spending some time snuggled on the couch in my snuggie with Munchkin, I’m feeling a bit better. I don’t know how I ever lived without a snuggie – its so comfy and cozy.

Since it was Fat Thursday yesterday, I enjoyed a few packi first at work, then at home. I got to have both jelly and custard filled ones. It was nice to indulge, but paczki are definitely not something I could eat everyday.

With lent just around the corner, I’m thinking that I might want to give up something this year, possibly chocolate? I need to put some more thought into it because 40 days without chocolate is a long, long time. But it would help me from buying every Cadbury Creme Egg I come across. Those things are my weakness!

Since it’s Friday and I don’t have work or school [yay!] I’m planning on spending some time in the kitchen. I’ve got a yummy dinner planned that involves pork chops, spaghetti squash and some Asian flavors. Hopefully it’ll turn out as good as it sounds! I need to run out and buy a few things that I’m missing, but right now, I don’t really feel like getting out of my PJs. It’s good to have a lazy, sick day once in a while.

Paczki are deep fried donuts that can be filled with almost everything – my two favorites are strawberry jam and custard. They are usually topped with powdered sugar or icing, but in some bakeries, you can find chocolate topped ones too. If you get a good paczek, the fact that it is deep fried will not mean that is is greasy or oily, instead it will be light, fluffy and doughy in the center.

My job is located in the biggest Polish community in New York, which happens to be home to some of the best Polish bakeries around. When I was walking to my car after work yesterday, I could smell paczki in the air because all the bakeries were prepping for Tlusty Czwartek. The smell was unreal! I don’t want to brag, but my grandmother makes the best paczki around.
