Happy Monday..I mean Tuesday!

Thanks to Memorial Day I have completely lost track of what day of the week it is.  I keep thinking today is Monday, but its actually Tuesday.  Then again, I have no real obligations until the end of August so what difference does it make to me.

Memorial Day weekend was pretty good.  In between doing tons of laundry and cleaning up after our vacation, Munchkin and I attended my friend Kris’ graduation party.  He just graduated with his Master’s Degree in I’m not sure what.  The party was a lot of fun and I got to see a lot of friends that I haven’t seen in forever.  Munchkin was the life of the party.  He is such an outgoing little guy and he is totally not scared of anyone or anything.  My friend’s band, Bona to Vada, played and Alex became a member by playing his maracas during one of their songs.

He also got to play guitar and drums and danced up a storm while they played.  Check them out here, they’re really good. Munchkin also got to play around on Kris’ motorcycle, which he enjoyed, almost as much as the Italian bread he was eating.
 

On Monday, we filled up Munchkin’s pool bright and early so the water could warm up a bit before he went swimming.

We really need to look into getting a bigger pool for this year, but it’ll do for now.  When the water was nice and warm, we changed into our bathing suits and got to splashing.

We also fired up the grill, as is required on Memorial Day, and grilled up some chicken, zucchini and peppers.  Very quick and very delish. 

We haven’t done much today, other than play outside.  Munchkin in currently taking a nap, but when he wakes up we have some errands to run.  Hopefully it won’t be 300 degrees again this afternoon. 

Mexico Recap

For the passed two days I’ve been doing load after load of laundry trying to get my life back into order after my vacation.  This is especially hard to do when you have no dryer and have to dry your clothes the old-school way, on a line.  The weather also wasn’t especially cooperative and a torrential downpour early this morning messed up my laundry plans for the day.  But enough about laundry…

My vacation to Mexico was great.  Munchkin and I had a great time in the pools and on the beach.  We stayed at the Grand Riviera Princess Resort in Riviera Maya, Mexico which is about a half hour away from Cancun.

The resort itself was absolutely gorgeous, by far the nicest place I’ve ever stayed.  The grounds were cared for each day.  There were always a ton of workers cutting grass and tending to the plants.  There were also a million of different little private seating areas where you could sit and enjoy the evening.

The beach was really nice, but we didn’t spend much time there.  Alex loved the sand, but he also loved eating it which I found a bit distressing.  The water was shallow along the shore and you could walk out for what seemed forever with the water not going higher than your chest.  Then again I am super tall, so maybe this isn’t exactly objective. 

I also woke up super early one morning to watch the sunrise with my boyfriend via Skype.  We were both super bummed that he could not be there with me, but we got to enjoy some time together even though we were thousands of miles away.

The food was great.  There are seven different sit down restaurants and two buffets in the resort.  It is all inclusive so you can eat and drink to your heart’s content.  We went to the Japanese, Mexican, Italian and Steakhouse.  All the food was really good and I am surprised I didn’t gain twenty pounds while I was there.  My favorite thing that I ate during the week was a Poblano Pepper stuffed with chicken and cheese in a spicy sauce.  It was totally not how I had imagined it when I read it in the menu, but it was soo good.  I also fell in love with Tres Leches Cake.  I must find a good bakery in New York to continue my love affair with this cake.

We spent most of our time by the pool.  Alex loved it because there were shallow areas where he could walk around and play by himself, without having to be held.  There was also a jacuzzi in the middle of the pool that we always went to which was very nice.

Even though I had a really good time, its nice to be home.  The weather in New York is a lot like it was in Mexico, hot! It was over 90 degrees today and I spend a good part of the day melting. Hope you all had a great holiday weekend and Happy Memorial Day!

Greetings from Mexico!

If I could chose a place to update my blog from for the rest of my life, this would probably be it.  I’m sitting on my balcony, with my legs up on the little table and enjoying the warm summer breeze.  We made it to Mexico and it is gorgeous!

We almost didn’t make it though.  While everyone in my house usually sets their own alarm to make double and triple sure that we wake up in time, that didn’t happen this time.  I woke up to a huge comotion and my mom running into my room saying we’re late.  We woke up at 5:15 and our flight was scheduled to take off at 6:45.  We barely made it to the airport, we were the last ones to get on the plane!

Luckily our flight went smoothly and we landed in Mexico at 11:30 local time, ready to make the most of our first day here.  First thing we did was get lunch.  We were starving! So far the food is pretty good, we’ve only been to the buffets, but tomorrow night we’re going to the Japanese restaurant for dinner. After lunch we took a walk through the whole resort, the place is pretty huge.  We finally found a spot by the pool that was perfect for us. A little bit secluded and not by the ‘party’ pool so munchkin doesn’t have a heart attack from the loud music.

We had dinner and everyone passed out right after except for me, as usual.  I am going to get to bed soon, I want to be up at 5:30 to watch the sunrise tomorrow! I wanted to add more pictures to this post, but the internet here stinks and it takes like 10 min to upload one.

Last Post before Vacay

Last day before vacation is always a busy one.  And it is of course once again raining in New York.  I’m pretty sure God wants me to really appreciate the warm Mexican weather, that’s why it has been super crappy here all week long.

I woke up this morning still craving pancakes, so the only thing I could do was succumb to my craving and make some cake batter pancakes.  There are probably the best thing I’ve ever eaten for breakfast, probably not the best thing for you but soooo delish!

After breakfast it was time for cleaning.  My house has been a total disaster since I got back from Philly on Monday.  Between packing and unpacking there were clothes everywhere.  After the house was spic and span, I went to get my nails done.  I used to get a mani almost every week, but I really think I enjoy doing my nails myself a lot more than getting them done.  If I didn’t have a gift certificate I got for Christmas, I probably wouldn’t have gone at all. My nails are now a super cute shade of yellow, which I think will look even better when I get a bit of a tan.

I also went to the post office where there magically was no line.  The line is always out the door when I go there.  I think the rain scared people away.  

For dinner I made myself a huge salad with grilled chicken.  It was really good.  There’s nothing better than avocado in a salad.

I also got to talk to my boyfriend on Skype, which totally made my day! I miss him like crazy.

After my mom got home, she dragged me to Marshall’s with her.  I never thought I’d say this, but I think I’m done shopping for a long time.  I’ve been to more stores and malls this past week than probably in months before.  I didn’t get anything, the only section that I checked out was the toys and I got this super cool book/puzzle for munchkin. 

Now that it’s almost midnight I’m really wondering if it’s worth going to sleep for less than four hours.  My flight is at 6:45AM so we have to be at the airport before 5AM.  Why is my family so masochistic? I’m not sure what the internet situation will be once I get to Mexico.  There are conflicting reports of the cost of WiFi and where it’s available.  I’ll try to check in a few times, but it might be a week until a real post appears.  Have a great weekend!

1. Do you and your spouse/significant other go to bed at the same time?
My boyfriend is the biggest sleepy head I know! On weekdays when he is working, I’m lucky if he doesn’t pass out before 10pm.  I, on the other hand, could probably stay up all night and still be up when Munchkin wakes up. Strangely enough, when we are together, especially when watching a movie before bed, I am always the one to fall asleep first, even if I’m loving the movie.

2. A question for the ladies…What kind of facial hair do you like on your man?
None, not a big fan of facial hair. I love my boyfriend’s baby smooth face!

3. What’s the worst vacation you’ve ever taken?
Nothing comes to mind. I don’t think I’ve ever had a really bad vacation.  I’m the kind of person who makes the best of any situation and if I’m on vacation I try to enjoy myself, regardless of the circumstances, which might not be great.  Hopefully my upcoming vacation won’t be the worst!

4. What’s the first-ever blog you followed?

The first blog I ever followed was Julie at PB Fingers.  I honestly don’t know how I even came across her blog, but I’ve been reading it for over a year. She is totally one of my fav bloggers and I love her doggy, Sadie!

5. Do you enjoy amusement parks?
I love amusement parks! I love roller coasters!  The bigger, faster and scarier the ride, the better.  I can’t wait to go to Six Flags this year.  I haven’t been in over two years and I am totally looking forward to it and the new stand up roller coaster, Green Lantern! Sounds so sick.

Crayons and Dirt Rollers…all in a day’s work for mommy

This morning I woke up knowing that if I didn’t get my butt outside and running soon, it wasn’t going to happen at all.  My legs are still sore from my run on Tuesday and today’s run was tougher than Tuesday’s.  The next run I do will be in Mexico and I don’t know how well that it going to go in the super warm weather.

 When I got home I was super hungry.  I really need to eat something before I work out because I felt kinda nauseous about when I got home.  I had to wait a few minutes before I started thinking about food because I knew that if I ate too soon, breakfast would not end well. Even though I had been craving pancakes all day yesterday, I settled on some egg bread with avocado on top.

Put avocado on anything and I will love it, guaranteed. 

After breakfast, I decided to let munchkin try out his crayons again.  So far, everything I’ve given him crayons, he’s ended up with more colors in his mouth that on the paper.  I think he’s starting to understand the concept because didn’t try to eat the crayons at all this time.

Now I am relaxing while munchkin plays with his dirt roller, not to be confused with a steam roller. I now know more about construction machines then I ever thought I would in my life, but I do have a good teacher. Munchkin also though that rolling my clothes while I was packing was a real good idea last night.  I guess I won’t have to iron anything now.

What I’m Loving Wednesday! #2

Happy Wednesday everyone! I can’t keep track of the days this week at all and today doesn’t feel like a Wednesday, but I’m glad it is. Only two more days until vacation!

Here are some things that I’m loving this week!

I’m loving… Skype! My boyfriend and I used Skype to be able to ‘see’ each other everyday when he was away at school. Now that he is in Poland for the month, its so great to be able to see his handsome face.

I’m loving… J. Crew outlet.  We went to the outlets this weekend and I got a bunch of really cute things for summer. I’m especially loving my hot pink tee, I’m pretty sure you could spot me from a mile away in it.

I’m loving… that I’m done with school! I have three months off before I have to hit the books again.

I’m loving… that I’m almost done packing.  Munchkin is all packed and I’m just a few loads of laundry away from being done.

I’m loving… Munchkin’s dance moves.  He’s been on a dance kick since we watched Dancing with the Stars on Monday. I’ve been trying to catch him on video, but as soon as he sees the camera, he stops dancing.

And last but certainly not least..
I’m loving… the two men in my life.

Hitting the pavement!

After a crazy month of studying, I finally laced up my sneakers and went for a run yesterday and it felt really good.

I downloaded Get Running, a couch to 5k app for my iPhone a while ago and I’ve decided to follow it as my training program.  I ran and walked a total 2.20 miles in 32 minutes.  I started out with a 5 minute warm up walk followed by 8 alternating 1 minute runs and 1 1/2 minute walks and finished with another 5 minute cool down walk. You only run every other day in the program, so today is my rest day.  Its probably a really good thing is it my rest day because its pouring outside. 

I’m really pumped to complete the whole program.  I’m looking for races that I could sign up for more towards the end of the summer.  I used to be a pretty good runner in high school and I hope I can get back into it.

Since we are leaving for vacation this Saturday, we are trying to clean out our fridge so we don’t leave food behind to get spoiled.  For dinner, since there was very little to work with, I made myself a salad out of the few veggies we had left.  I combined spring mix, an orange pepper, a tomato, some string cheese and a veggie burger and topped it off with vinaigrette.  It was pretty good and munchkin even stole some from me.

After dinner, we headed to Babies R Us so I could buy munchkin a harness backpack thing for our vacation.  Munchkin is notorious for running away while in public and losing him in Mexico does not sound like fun.  He might look a little silly in it, but I think its better to be safe than sorry.  We also went to Marshall’s where I bought myself some headphones because out of the three pairs that I had, both headphones didn’t work in any.  I got really cool looking headphones.  They’re the Skullcandy Houla Galaxie and they are wooden headphones and the cords on them are like rope instead of the usual plastic cords.  They were only $25 at Marshall’s but cost $99 on the Skullcandy website.  I got an awesome deal!

Now its time to find something to eat for breakfast and get back to packing.  My suitcase can only weigh 40 pounds, so this might be a challenge for me.

Whirlwind Weekend

I spent the whole weekend in Pennsylvania with my boyfriend helping him celebrate his graduation and pack for his trip to Poland.  He is now just a few hours away from landing and I’m back home and I’m not gonna lie, I miss him already.

We were super busy this weekend.  On Thursday night, I finished my last final and drove down to Philly because we had to be up super early the next morning to drive to Tommy’s school to finish packing up his apartment and go to his graduation! I’m super proud of him and his 4.0 GPA for his last semester!

Before his graduation we went out for lunch at Acme BBQ.  This place seriously has the best BBQ I’ve ever had.  If you’re ever in Willpo, I highly recommend the brisket.

We got home pretty late that night so we didn’t do a family dinner, instead Tommy and I drove to Philly for me to see some of the city and to get a late dinner.  Not surprisingly, we decided to get sushi.  After driving around for a while, we decided on Raw Sushi & Sake Lounge.  The place is seriously amazing.  The sushi was perfect and the whole atmosphere and decor of the place was great.  We are already planning on going back when Tommy gets home.

 We woke up early on Saturday to run errands.  First on the list was a trip to the outlet mall.  J Crew is seriously my favorite store, especially the outlet.  We both got a lot of nice things for summer and Tommy got some work clothes.  I also got munchkin some new PJs for summer and a Cars beach towel. 

After we were done with out shopping for the day, we headed home to change and go out to dinner at Arirang Hibachi Steakhouse with the family, to celebrate Tommy’s graduation. I really enjoyed dinner, not only was the food amazing, our chef was hysterical and had us cracking up the whole time.

 We also went out for drinks that night, where I spilled my drink not once, but twice and also managed to shatter a glass in the process. Go me. Luckily no one was hurt.
Sunday morning we woke up and went to church and got our prayer on.  After a quick breakfast, we were off to the King of Prussia Mall because we still needed to pick up a few things for our vacations. We walked around for a while, did a lot or browsing, fell in love with LoveSac couches and had Coldstone before heading back home for a delicious dinner prepared by Tommy’s mom.

 After dinner we started on laundry and packing which we didn’t finish until 3 AM.  Granted, we did fall asleep for about an hour while waiting for a load of laundry to finish.  We also ate cheesesteaks at 11 PM.  Might not be too healthy, but they were delish and totally hit the spot. I was so tired by the time we were done that I passed out on the basement couch and slept there until morning.  
We woke up this morning and drove around in circles thanks to the GPS in my iPhone.  It gave us wrong directions about four times this weekend, I really don’t know whats wrong with it! We finally got to the UPS store to weigh Tommy’s suitcase, which we were almost sure was over the 50 pound weight limit, but miraculously wasn’t. 
On the way to the airport we had a lot of fun learning German phrases, because Tommy has a layover in Frankfurt.  I’m pretty sure the only word he remembers is toilet, but I think that’s a really good word to know, nonetheless.  We finally made it to the airport after standing in traffic for a bit on the turnpike.  Tommy was already checked in, so all we had to do was check his luggage and we had two hours to explore the airport.  Needless to say, there is nothing to explore at Newark airport.  JFK is my airport of choice.  We finally said our goodbyes and I waited around for a bit before leaving to make sure he got through security okay.  
And now me and munchkin are all alone for one month.  I’m gonna miss Tommy like craaaazy.  He really is like my best friend and I’m pretty sure there’s no one else that I could spend that much time with and not want to kill.  Hopefully this month will fly by pretty quick, because I want him back home already!

BBQ Pizza, Well Done

Yesterday was a super busy day and I didn’t get around to posting in the evening because I didn’t get to sit down until midnight and all I wanted to do was get my butt to bed.

I started the day off with was eggs for breakfast.  It had been a while since I made dippy eggs and I enjoyed every bite.  After that, I did some studying for the last time in at least three months! I’m super excited to be almost finished.

Halfway through studying I got hungry so I threw together a quick wrap to hold me over until the boyfriend got home from work to make dinner.  The wrap consisted of turkey, marinara sauce and shredded cheese which I melted together in the microwave.  It was really delish.

Grilled Pizza
For dinner, we decided to make grilled pizza which was inspired by Courtney from Sweet Tooth, Sweet Life.  While everything went smoothly for Courtney the first time she made it, our experience wasn’t that great, but delicious in the end, nonetheless.  I started out by roasting our veggies in the oven at 350 degrees for about 20 minutes.  I tossed them will olive oil and salt and pepper before they went in. Since the actual pizza doesn’t stay over the heat long enough to cook the veggies, you have to roast them to prevent having totally uncooked veggies on the pizza.

I bought Pilsbury thin crust pizza dough because we were going for a crispy crust, like a brick oven pizza which we both love.  I rolled the dough out on a piece of tin foil and it was ready to go onto the grill.

While the recipe said to keep the dough on the grill for 3 minutes on high, we learned that 3 minutes really means 3 not 5 and that high is too high when grilling pizza, at least on our grill.

After a good deal of scraping, we salvaged the crust, covered it in sauce, cheese and toppings and threw it back on the grill to melt the cheese. We also cooked out other crust, the right way.

Even though it may look a little burnt, you could barely taste it.  I hate it when my bread is toasted too much, but I really didn’t mind this.  The sauce and cheese totally overpowered the burn flavor. 

After dinner we ran twenty thousand errands.  We went to the beer store, 99 cents store, supermarket, car supply store, Borders and Starbucks! I bought cheesecake supplies to make Tommy a cheesecake for his graduation.

I also bought the Hunger Games and I am super excited to start reading it.  I’ve heard so much good stuff about this book and I hope I love it as much as other who have read the series do.

At Starbucks, I got a coconut mocha frapaccino and it was flippin delish.  I rarely get fraps because about halfway through the drink I start feeling too cold and don’t feel like finishing it.  Yes, I am a bit strange. Someone on twitter tweeted that they’re obsessed with the new frap, so I had to try it and I’m glad I did!

After we got home, I gave munchkin a bath and started on the cheesecake.  I can’t wait to try the bad boy since I didn’t get a taste of the last cheesecake I made.

Today is another super busy day! I’m meeting up for a sushi lunch with the boyfriend because he needs to get his last sushi fix before being away for a whole month.  I have to finish packing for my trip to Philly this weekend and I have to pick up a few more graduation related things to surprise the boyfriend.  After I get through all of that, I have to get to school to take my four hour Civil Procedure final at 6pm.  After I’m done with the final I’ll be hopping in my car and driving to Philly.  I just hope I don’t fall asleep along the way!
